THIS weekend we celebrate Heritage Day and if you are ready to enjoy a braai in warm weather with loved ones, here’s a simple warm potato salad recipe for all to enjoy.
POTATO SALAD INGREDIENTS
, 1,5kg small potatoes
, Few sprigs thyme
, Two tablespoons olive oil
SALSA INGREDIENTS
, Two red peppers
, Three large cloves garlic, unpeeled
, One large red chilli
, Three tablespoons olive oil, extra for drizzling
, 250g tomatoes, roughly chopped
, Four spring onions, thinly sliced
, Zest and juice of one lime
PREPARATION
- Heat oven to 200°C. Put potatoes, thyme and oil on baking tray. Season, then roast for one hour or until tender and golden.
- Put peppers, garlic and chilli on a small baking tray, drizzle with oil and roast in the oven for 25 to 30 minutes or until lightly browned.
- Remove the skin from the garlic and discard the stalks and seeds from peppers and chilli. Blend the peppers, garlic, chilli, a third of the tomatoes and olive oil in a food processor, then mix in the rest of the tomatoes. Add the spring onions, lime zest and juice, and serve over the potatoes.
