Ingredients
- - 4 medium sweet potatoes, cut into wedges
- 30ml - olive oil
- - salt and pepper
- 15ml - butter
- 15ml - olive oil
- - 1 large onion, sliced
- 15ml - brown sugar
- - salt and pepper
- 60ml - olive oil

- 30ml - apple cider vinegar OR white wine vinegar
- 15ml - honey
- 1ml - ground cumin
- 30ml - sesame seeds, toasted
- - salt and pepper
- 150g - mixed lettuce
- 750ml - cooked brown rice

Methods
Preheat the oven to 190°C. Line a baking sheet with aluminium foil and grease with non-stick spray.
Sweet potatoes
Spread the potatoes on the prepared baking sheet and drizzle the oil over. Season and bake for 25-30 minutes or until done.
Onion
Heat the butter and oil in a pan and fry the onion until golden brown. Sprinkle the sugar over and season.
Dressing
Whisk everything together.
Salad
Gently toss the sweet potatoes, onion, lettuce and dressing. Serve on the brown rice.
