Ingredients
- 4 - x 150g strip steaks
- - salt and freshly ground pepper
- 30ml - olive oil
- 15ml - butter
- - SAUCE
- 4 - anchovy fillets
- 2 - garlic cloves
- - juice and finely grated zest of 1 lemon
- 2 - spring onions
- 15ml - white wine vinegar
- 45ml - olive oil
- - 2 handfuls of mixed fresh herbs
- - TO SERVE
- - salt and pepper
- - fresh herbs
- - fried onion rings
Method
1 Season the steaks well with salt and pepper and coat with the oil.
2 Heat a pan until smoking hot and seal the steak in batches until a golden crust forms. Return all the steaks to the pan and add the butter. Cook for 3-5 minutes or until the steaks are done to your liking. Remove from the pan and rest for 5 minutes.
3 Sauce Add all the ingredients to the bowl of a food processor and pulse until smooth.
4 To serve Season the sauce with salt and pepper. Slice the steaks,garnish with herbs and serve with the sauce and onion rings.
