Ingredients
  • 4 - x 150g strip steaks
  • - salt and freshly ground pepper
  • 30ml - olive oil
  • 15ml - butter
  • - SAUCE
  • 4 - anchovy fillets
  • 2 - garlic cloves
  • - juice and finely grated zest of 1 lemon
  • 2 - spring onions
  • 15ml - white wine vinegar
  • 45ml - olive oil
  • - 2 handfuls of mixed fresh herbs
  • - TO SERVE
  • - salt and pepper
  • - fresh herbs
  • - fried onion rings
Method

1 Season the steaks well with salt and pepper and coat with the oil.

2 Heat a pan until smoking hot and seal the steak in batches until a golden crust forms. Return all the steaks to the pan and add the butter. Cook for 3-5 minutes or until the steaks are done to your liking. Remove from the pan and rest for 5 minutes.

3 Sauce Add all the ingredients to the bowl of a food processor and pulse until smooth.

4 To serve Season the sauce with salt and pepper. Slice the steaks,garnish with herbs and serve with the sauce and onion rings.
