INGREDIENTS
300g ox tripe – make sure that its cleaned and cut into cubes
750ml water
45g mild and spicy Rajah curry
Two garlic cloves
½ onion, diced
Salt and pepper
Preparation
Throw the meat in a large pot with all the ingredients.
Cook it on a high heat until it starts to boil.
Reduce the heat and let the meat simmer for three to four hours until it is cooked to perfection – the meat needs to be soft before it can be eaten.
Remember: Always check the pot and refill the water.
Serve with hot pap or bogobe ba ting (sour pap).
