Ingredients
- 25g butter
- 25g flour
- 500ml milk
- Salt and white pepper
- 80g cheddar cheese, grated
- 300g macaroni pasta
- 15ml olive oil
- 200g bacon, cut into pieces
- One red onion, chopped
- 2,5ml each of chilli spice, cumin, paprika
- 500ml chicken, cooked and shredded
- 400g can of creamed sweetcorn
CHEESE SAUCE PREPARATION
- Preheat oven to 200°C.
- Grease a 23cm×18cm baking dish.
- Melt butter in saucepan. Stir in flour and cook for one minute. Take pan off heat and slowly stir in milk to smooth sauce. Return to heat and let boil while stirring.Simmer gently for eight minutes. Season with salt and pepper then stir in cheese until melted.
MACARONI PREPARATION
- Cook pasta according to directions in until firm, or al dente. Drain and set aside.
- Heat oil in large pan over high heat then sauté bacon and onion until slightly golden. Add spices, chicken, sweetcorn and let simmer until all is heated through. Stir pasta and cheese sauce in chicken mix, then bake in oven for 10 minutes and serve. – DRUM and FOOD24.COM
