INGREDIENTS
- 250g Snowflake Queen Cakes flour mix
- One cup strawberries, diced
- 60ml milk
- 60ml oil
- 150ml coconut
- One egg
PREPARATION
- Crack egg into a mixing bowl. Add the milk and oil, then whisk together.
- Stir 250g Snowflake Queen Cake flour into the mixture
- Add most diced strawberries and coconut to the cupcake mixture and mix together thoroughly.
- Grease a 12-hole muffin tin and sprinkle with coconut.
- Pour or spoon the cupcake mixture in the muffin tin’s slots. Top with remaining diced strawberries
- Bake the dough in a preheated oven at 180 °C for 20 minutes or until golden brown.
- Take out and let cool in the pan for a few minutes.
- Sprinkle coconut over the cupcakes for garnish.
