Ingredients
-Six tablespoons unsalted butter, melted
, Extra butter for baking dish
, One cup yellow mealie meal
, ¾ cup White Star maize meal
, One tablespoon sugar
, One and a ½ teaspoons baking powder
, ½ teaspoon baking soda
, ¼ teaspoon salt
, Two large eggs, lightly beaten
, One and a ½ cups buttermilk
PREPARATION
- Preheat the oven to 220°C and lightly coat an 20cm baking dish with extra butter.
- In a large bowl mix the yellow mealie meal, maize meal, sugar, baking powder, baking soda and salt together.
- In another bowl, mix the eggs, buttermilk and butter together.
- Pour the buttermilk mixture in the cornmeal mixture. Fold together until there are no dry spots in the lumpy batter.
- Pour the batter into the greased baking dish.
- Bake in the oven for 20 to 25 minutes or until the top is golden brown. Jab a toothpick in the middle. If it stays clean, it’s ready.
- Remove the bread from the oven, allow to cool for 10 minutes and serve.
