BOEREWORS MEATBALLS RECIPE

Ingredients

- 450g boerewors sausage

- 45ml fine breadcrumbs

- 15ml Canola or olive oil

- Three spring onions, chopped

- Two garlic cloves, chopped

- 1/2 red, yellow or green pepper, chopped

- One red chilli, seeds removed and chopped

- Three tomatoes, peeled and diced

- 45ml tomato paste

- 30ml sweet and sour sauce

- 15ml chutney

- 5ml red wine vinegar

- 30ml sour cream

- One chicken stock cube, crumbled

- One handful of fresh basil, chopped

- 2,5ml dried, mixed herbs

- 400ml red kidney beans, drained

- Salt and pepper

PREPARATION

  • Preheat the oven to 180°C. Remove boerewors mince from sausage skin. In bowl, mix mince and breadcrumbs. Form balls and put on greased baking tray.
  • Bake balls for 10 to 12 minutes. Remove from oven and set aside.
  • In medium saucepan, heat oil on stove, sauté onion, garlic, pepper and chilli for about two minutes. Add tomatoes, tomato paste, sweet and sour sauce, chutney, red wine vinegar and sour cream, then stir and cook for two more minutes. Add stock, basil, herbs and beans. Add water, if needed, then stir and cook for two minutes. Gently add meatballs and salt and pepper.
  • Remove pan from heat and serve.
