Ingredients
- One can black beans, rinsed and drained
- One can whole sweetcorn, drained
- Four tomatoes, seeded and chopped
- One small red bell pepper, diced
- One jalapeno pepper, seeded and minced
- 1/3 cup fresh coriander, chopped
- 1/4 cup red onion, diced
- 1/4 cup fresh lime juice
- Two tablespoons red wine vinegar
- One teaspoon salt
- 1/2 teaspoon black pepper, ground
- Two avocados, diced
PREPARATION
- Mix black beans, corn, tomatoes, red bell pepper, jalapeno pepper, coriander, red onion, lime juice, vinegar, salt, and black pepper in a bowl and fold avocado into the mixture.
- Cover bowl and salsa with plastic wrap – lay the wrap right on top of the salsa – and let it chill for at least two hours.
