INGREDIENTS

, ¼ cup (60ml) olive oil

, One onion, peeled and finely chopped

, Three cloves garlic, peeled and crushed

, Three sprigs thyme, leaves only

, One teaspoon (5ml) smoked paprika

, Pinch of chilli flakes

, One 410g tin chopped tomatoes

, ½ cup (125ml) beef stock

, One teaspoon (5ml) sugar

, Salt and freshly ground pepper

, 500g boerewors

, 400g spaghetti

, Grated Parmesan, for garnish

, Fresh basil, for garnish

TOMATO SAUCE PREPARATION

  • Heat half the olive oil in heavy pot on medium heat. Saute onions until golden brown. Add garlic, thyme, smoked paprika and chilli, and fry for another minute.
  • Pour in tin of chopped tomatoes, beef stock and sugar. Season with salt and pepper. Cover with a lid and simmer over medium to low heat for an hour.

BOEREWORS MEATBALLS PREPARATION

Remove the sausage meat from its casing and place into a bowl. Shape meat into golf balls.

  • Heat remaining olive oil in frying pan on medium heat and fry meatballs until cooked through.
  • Cook spaghetti as packet instructs.
  • Toss cooked spaghetti in tomato sauce until well coated and top with the meatballs.
  • Serve on plates, add garnish and eat.
