Ingredients
- Four eggs
- One and a half cups granulated sugar
- One teaspoon vanilla essence
- One cup oil
- Two and a half cups flour
- Two and a half teaspoons baking powder
- One teaspoon bicarbonated soda
- One teaspoon salt
- One cup buttermilk
Preparation
- Place the eggs, sugar and vanilla in a bowl and beat until foamy and pale. Mix in the oil and beat lightly again. In a separate bowl, sift together the flour, baking powder, bicarb and salt. ) Gently, with a metal spoon, fold in the flour a little at a time, alternating with the buttermilk, until all the ingredients have been added.
- Spoon the mix in paper cases and bake at 180°C for about 15 minutes.
Tips
- Granulated sugar: Most recipes call for caster sugar, but because it is a relatively wet mix the sugar easily dissolves if it is granulated sugar. It is also cheaper.
- Oil: Oil-based recipes make cupcakes moister and stay fresher for longer.
- Buttermilk: The acid of buttermilk counteracts any soda taste from the raising agent. Yoghurt or maas can also be used.
